Until the Plate Arrives
At 12 noon, the clock tower bell rings and the swinging doors open. While you grab a piece of bread at the window seat, in the kitchen a yolk sun drops onto a hill of flour, noodles are pulled along the dough road, and with a toss in the pan at Tomato Canyon — the plate arrives, and two fork gunslingers face off: “Who draws first?” Instead of a duel, they twirl the pasta and share it, and with dessert it's exactly one hour. A journey-style short: “From Dough to Dessert, a One-Hour Lunch.”
