While the LA galbi's journey (house-made marinade → 24+ hours of sous-vide low-temperature aging) turns the outer day ring once around, the inner one-hour arc fills along the guest's path (B1 signboard → entrance → hall → seasonal Korean table → bulnak hot pot → a drink). At the end, the rim of a brass dish filling the whole window overlaps the clock's rim, and the two clocks close together.
