How One Plate Reaches the Counter Seat

Starting from the finished plate with cheese falling like snow, we walk a plate's path backward in time: the row of bar stools just inside the glass door, ordering first at the kiosk, fresh noodles pulled out of the open kitchen beyond the counter, sauces made in-house, four signature dishes, and finally the counter seat. In the end, a walnut-colored counter band runs across between the kitchen above and the seats below.
